  • 1 tablet Aiguebelle Dark Chocolate Dessert 55%
  • 150 ml liquid cream
  • 150 ml milk
  • 3 egg yolks
  • 1 tablespoon sugar

Preparation

  1. Chop the Aiguebelle Dark Chocolate Dessert Tablet 55% coarsely and place it in a bowl.
  2. In a large saucepan over medium heat, pour the cream and milk and bring to a boil.
  3.  In a bowl, place the egg yolks and sugar and mix with a whisk.
  4. Add the cream and warm milk to the yellow egg mixture while mixing to prevent the eggs from coagulating.
  5. Put everything back in the pan, then cook the cream over low heat while stirring constantly until it thickens slightly and coats your spatula.
  6. Pour the cream over the chocolate, reserve for 1 minute.
  7. Using a spatula, mix until you have a smooth cream without lumps.
  8. Pour in glasses.
  9. Reserve in the fridge for at least 4 hours before serving.
